Mamma"s Biscuits

Mamma's Biscuits
When I was very young, my mother taught me to make biscuits. I would always forget the recipe . But finally I remembered It in my late teens, and boy am I glad I did. Soft and tender, fluffy  they melt in your mouth. The same taste from childhood is in my home now, just because I learned how to make my Mamma's biscuits


Biscuits

3 cups flour all purpose
2 Tablespoon white sugar
1 teaspoon salt                                                               
These are ready to be placed on baking sheet

3 Tablespoon baking powder                                             

1/2 cup shortening or butter

1 cup milk
1 tablespoon yogurt

Mix the dry ingredients together, then add the shortening cutting it into the flour mixture, cut into pea size. Then mix the liquid and yogurt well. add milk into the flour mixture trying not to over mix. form a ball , on a floured surface , flatten into 1/2 inch thickness. Use biscuit cutter. place on greased baking sheet, and bake for 20 minutes or until browned.

I used a mixture of bread flour and all-purpose flour i like the texture.

I stumbled upon this website a few weeks ago, and felt I had to try this. The recipe looked simple,easy,and Delicious . The site is

Korean Beef Bowl
Ingredients
1/3 cup sugar
1/4 cup soy sauce
1 tablespoon sesame oil
1/2 teaspoon crushed red pepper
flakes, or more to taste
1 tablespoon grated ginger
1 tablespoon vegetable oil
3 cloves garlic, minced
1/2 small onion finely diced
1 pound ground beef
2 green onions, thinly sliced
Cooked rice, for serving

Instructions
In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and
ginger.
Heat vegetable oil in a large skillet over medium high heat. Add garlic and cook, stirring
constantly, until fragrant, about 1 minute. Add finely diced onion stir until translucent. Add ground beef and cook until browned, about 35
minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in soy sauce mixture
and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
Serve immediately with rice.

This is a meat loaf I cooked for my son. He came over with the meat and I provided the rest. The onions, green peppers , seasonings , and the time. He came back over to pick-up the meat loaf and had to taste it. U mm he loved it.


Wrap Bacon from end to end

Bacon Wrapped Meat Loaf

1 Pound ground beef
1 1/4 cup bread crumbs
2 Tablespoon steak seasonings
1 teaspoon salt
1 teaspoon powdered garlic
1/2 diced onion
1 bell pepper diced
1 grated carrot
2 minced garlic cloves
1/4 cup BBQ sauce
1 egg
1 pound package bacon

Preheat oven 350
Place all ingredients in bowl, and mix well. Shape into a loaf,and wrap bacon 

around loaf from end to end. Place in baking pan (13x9) and cover with foil. 

Bake for 40 minutes, then remove foil to brown bacon for 15 minutes.  Use BBQ 


sauce as a glaze. Enjoy

Blueberry Muffins

It's Blueberry season and my husband is happy!! Happy, because he loves them ; while I am indifferent to them. cooked, or fresh it makes no difference to me, but for him they are great tasting in pies, bread, muffins, cookies the list can go on and on for him. Therefore, when the blueberries hit the stores I went shopping,for the best price and the best looking berries. I am making blueberry muffins for my family some love them,but others hate them it is just a matter of taste. I must give credit to allrecipes.com for the recipe. I did  reduce the recipe in half  and it still came out great!

INGREDIENTS:
1 cup fresh blueberries
2 tablespoons all-purpose flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons margarine
3/4 cup white sugar
1 eggs
1/2 teaspoon vanilla extract
1/2 cup milk
DIRECTIONS:
You have scaled this recipe's ingredients to yield a new amount (12). The directions below still refer to the original recipe yield (24).
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffins tins, or line cups with paper liners.
2. Sprinkle 1/4 cup flour over blueberries, and stir to coat berries thoroughly.
3. In a small bowl, whisk together 2 cups flour, baking powder and salt.
4. In a large bowl, cream margarine, and gradually mix in sugar. Beat eggs, and stir into creamed mixture along wi
th vanilla. Stir in milk alternately with flour mixture, mixing well after each addition. Fold in berries. Fill muffin cups 2/3 full with batter.
5. Bake for 25 minutes.

Oh goody Caramel Candy, chewy, sweet, and soft Caramel Candy. 

The grand kids love them and so will you. I wanted to make a special sweet treat for my family and found this recipe on justapinch.com, and boy was it Delicious. However my main concern was how much time would a busy person spend in the kitchen and cook time is only 6 minutes. Now that is a winning number. Nevertheless, cooling will take over 2 hours. But the cost was pretty super $3.00 or under if you use generic products. 




 EASY CARAMELS


Ingredients 
1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light Karo syrup
1/2 cup sweetened condensed milk
Directions
1. Combine all ingredients in a saucepan
2. Cook 6 minutes on med ­high heat, stirring every two minutes.
3. Stir and pour into lightly greased dish.
4. Let cool.
5. Cut, wrap in wax paper & store in an air tight container
6. Enjoy whenever you like :)

Coconut Cashew Butter Cookies
INGREDIENTS:
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup white sugar                                                                 

1 teaspoon vanilla extract
1/2 cup cashew butter
1/2 cup firmly packed brown sugar
1 egg
2 Tablespoon sour cream tablespoons milk
1/4 cup coconut
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix flour, baking soda, and salt together in a small bowl.
3. Beat butter, white sugar, and vanilla extract together with an electric mixer in a large bowl until smooth. Add cashew butter, brown sugar, egg, and milk to the butter mixture; beat until smooth. add coconut Gradually add flour mixture and mix until just incorporated into a dough.
4. Roll dough into 1 1/2-inch balls and arrange onto a baking sheet. Lightly press a fork into the top of the balls to make a crosshatch pattern.
5. Bake in preheated oven until golden brown, 12 to 14 minutes. Makes 24 cookies

Chocolate Chip Banana Bread

I can remember as a kid standing in the kitchen, and eating 5 to 6 bananas at a time.
I love bananas! I love them, I really do! I eat them plain, in muffins, cakes,and on ice cream. When you add them to any flour mixture, a moist treat is sure to follow, and this  recipe is one great treat. Bananas and chocolate what's not to love!








Easy Banana Bread

Servings: 10

INGREDIENTS:
3 ripe bananas, mashed
1 cup white sugar
1 egg  
1/4 cup melted butter
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chocolate chips
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
2. Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
3. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.




I used over ripe bananas and the flavor of bananas shines though , so use the ones you would throw away, for they are the very best in flavor! Good Baking

Creamy Beef Hamburger Helper


1 1/2 to 2 Pounds ground beef

3 to 4 packages of Ramen Noodles (save flavor packs)

1 medium chopped onion

1 green pepper

1 Tablespoon minced garlic

1 Tablespoon chopped parsley

1 Tablespoon southwest spice mix

2 1/2 cup beef broth

2 tablespoon flour


1/4 cup water

 1. Brown ground beef cooking all water out.
2.Add 3 or 4 packages of broken Ramen Noodles cook until lightly browned.
3.Add onion, green pepper, garlic, and parsley cook until onions are translucent.
4.Add spice, and 2 flavor packs stir well.
5.Pour in the broth heating well
6. Mix flour, 1 flavor pack and water until lumps
disappear
7.Mix into meat and meat mixture, cook until thicken.

Sweet Corn Bread








Sweet Corn Bread a staple of the South and old school cooks. This recipe I learned from my mother. In the  South you use cornbread to sop up gravies,and green juices, kale, collard,and salad greens. The secret to this bread is the buttermilk tangy and creamy it leads to a moist dense bread, that helps it absorbs all the good flavors.
If you cook this you will be cooking an authentic Southern favorite.   










 Sweet Corn  Bread




Ingredients

1 1/2 cup all-purpose flour


1/2 cup yellow cornmeal


1/2 cup white sugar


1 teaspoon salt


3 1/2 teaspoons baking powder


1 egg


1 cup buttermilk


1/3 cup vegetable oil

Directions

1.Preheat oven to  350 degrees F.


2. Oil 9 inch round cake pan.


3.in a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and oil until well

combined.


4.pour batter into prepared pan.


5.Bake for 25 minutes.

A few days ago I went to Roanoke Rapids and went 
shopping at Save A Lot. They had fresh green beans at a 
good price and I had to buy some Then I looked for a 
different way to prepare them and I found this recipe. It is 
sooo good PLEASE TRY!!!

Fresh Green Beans, One Way


1 lb green beans

1 cup chopped onion

2 cloves garlic

1/2 cup chopped red bell pepper

2 tablespoons bacon grease (can substitute 1 T butter and 1 T olive oil)

1 cup chicken broth

1/2 to 1 teaspoon kosher salt (can substitute regular table salt; use 1/4 to 1/2 teaspoon)

Ground black pepper

Snap the stem ends of green beans, or cut them off in a big 
bunch with a knife if you’d like. Just don’t tell Granny. Melt 
bacon grease in a skillet over medium low heat. Add garlic 
and onions and cook for a minute. Then add green beans 
and cook for a minute until beans turn bright green. Add the
 chicken broth, chopped red pepper, salt, and black pepper. 
Turn heat to low and cover with a lid, leaving lid cracked to 
allow steam to escape. Cook for 20 to 30 minutes or until 
liquid evaporates and beans are fairly soft, yet still a bit crisp.
 You can add more chicken broth during the cooking process, 
but don’t be afraid to let it all cook away so the onions and 
peppers can caramelize.

Hello, I'm sitting at home thinking about what I want to cook, when I ran across a recipe that used a crock pot to cook a cheese cake.  I was compelled to try it God did it turn out well!!! The cheese cake did not crack like countless many did before. Now I can cook a perfect one. 





Slow-Cooker Sour Cream Cheesecake

Cheesecake cooked in a slow cooker has an unbelievably silky texture because the machine steams the cake as it bakes. The toughest part about making it is resisting the urge to peek inside the slow cooker—the lid must stay closed to retain heat.
   




INGREDIENTS
3/4 cup graham cracker crumbs
2 1/2 tablespoons unsalted butter, melted
1/4 teaspoon cinnamon
2/3 cup plus 1 tablespoon sugar
Salt
12 ounces cream cheese, at room temperature
1 Tablespoon cornstarch
2 large eggs
1 teaspoon pure almond extract
1 cup sour cream
 In a medium bowl, mix the graham cracker crumbs with the melted butter, cinnamon, 1 tablespoon of the sugar and a pinch of salt. Press the crumbs over the bottom and 1 inch up the side of a 6-inch spring-form pan that's 3 inches deep.
 In a standing mixer fitted with a paddle, combine the cream cheese with the flour, the remaining 2/3 cup of sugar and 1/4 teaspoon of salt. Beat at medium-high speed until smooth, about 2 minutes. Scrape down the side of the bowl and add the eggs and the almond extract. Beat at medium speed until blended. Add the sour cream and beat until smooth. Pour the batter into the spring-form pan.
 Fill a 6- to 7-quart round or oval slow cooker with 1/2 inch of water and position a rack in the bottom. Set the cheesecake on the rack. Cover the slow cooker with a triple layer of paper towels and the lid. Turn the cooker to high and cook for 2 hours without peeking. Turn off the heat and let stand until the slow cooker has cooled, 1 hour.
 Remove the lid and the paper towels and transfer the cheesecake to a rack to cool to room temperature, about 1 hour. Cover the cheesecake with plastic wrap and refrigerate until chilled, at least 4 hours.
 Heat a sharp, thin-bladed knife under hot water; dry the knife. Carefully run the knife around the edge of the cheesecake. Release the spring and lift the cheesecake out of the mold. Cut into wedges and serve.
