chicken and Rice The way my mother Made IT!

Chicken And Rice

Today I went to my mothers house and walked in the kitchen and saw brother Kelly cooking chicken.  We then decided to cook chicken and rice after much discussion. The recipe is a method not   an extract measurements kind of thing. So let's get started

  Chicken And Rice


2 chicken quarters
4 chicken wings
1/2 chopped large onion
1 teaspoon pepper
1 teaspoon  powered garlic
1 teaspoon powdered onion
1/2 teaspoon salt

2 carrots peeled and diced              
1 small onion diced
2 teaspoon parsley flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1 celery stalk diced
1 cup frozen sweet peas
1 cup of long grain rice

Place the first 8 ingredients  in crock pot and cook until done on high. Remove the chicken and reserve the broth, while chicken cools, Measure out 2 cups broth , placing 3/4 of a cup in a saucepan and boil down by half. With the remaining 1/4 cup of broth, add 1 tablespoon of cornstarch stirring until smooth with no lumps. add the corn starch mixture to the broth, stirring often until gravy has thicken. Then take off stove. In the crock pot place 2 cups of the remaining broth ( add water if necessary) the carrots,onions, garlic and onion powder, and celery cook, until the carrots are tender.  Then remove cooked chicken from bones, and place in crock pot adding 1 cup of rice. Cook until rice has absorbed  the liquid. Now it is ready to serve. Serve Gravy over Chicken and rice

Hamburger Buns

Hamburger Buns fresh from the oven, soft and sturdy enough to hold up to sauces and gravies. This is what I made this week. Topped with sesame seeds and an egg wash. This gives a shiny gloss to the buns. I used only 3 cups of bread flour and only made 6 buns. They are really mammoth. I think I will use them for giant sandwiches and hamburger for my grandchildren I know one of then will love it. There is a roasted chicken in the oven cooking, and I will be making a gravy from the juices. Now that would be Delicious with my mammoth buns. May be I should name them Mammoth Buns,it makes a lot of sense. 




Hamburger Buns

1 1/4 cups water warm ( warm to the wrist) 150 DEGREES
1 tablespoon yeast
1 teaspoon sugar
1 egg

3 to 3 1/2 cups bread flour
2 tablespoon sugar
1 teaspoon salt
1 egg ( for wash)


1. In a small bowl place water, yeast,and sugar stir. Then let sit until foamy,add 1 egg and stir well.
2. Add all remaining 3 cups flour,2 tablespoon sugar.and salt to a mixing bowl ( I have a kitchenaid that I love) Using a dough hook,and slowly adding water mixture. Stop mixer when dough forms a soft ball other wise slowly add remaining flour until it does form a ball.
3.Dump onto a floured surface and knead for 10 to 15 minutes or until dough is elastic.
4. Place in a greased bowl turning dough once to grease both sides. Place plastic wrap over bowl let rise double in size for 40 minutes depending on the weather.
5.Punch down and cut into 8 to 6 equal parts making balls on floured surface.
6. Use rolling pin and roll to 1/2 inch thickness. Place on greased pan and cover with plastic wrap. when they have risen to double size use egg wash and sprinkle sesame seeds
7. Place in a 375 oven and cook 20 minutes or until brown.

I had't made Swiss steak in over 10 years, however I had some round steak and decided to make it. The recipe I found was on allrecipe.com. which is a great website. I wanted to share a recipe that brought me so much pleasure so here it is . I also made Flat Bread will post the recipe later. 








Slow Cooker Swiss Steak and Onion

"Pan-fried round steaks are slow-cooked with onion and garlic in a tomato-based sauce for an easy version of a classic beef recipe."
INGREDIENTS:
3/4 cup all-purpose flour
2 teaspoons salt
2 teaspoons dry mustard
1 teaspoon black pepper
2 pounds  steak
1/4 cup vegetable oil
1 onion, sliced thin
2 cloves garlic, minced
3 cups beef broth
2 tablespoons tomato paste
2 (14.5 ounce) cans diced tomatoes
2 tablespoons Worcestershire sauce
2 teaspoons ground smoked paprika
2 teaspoons ground thyme

DIRECTIONS:
1. Mix flour, salt, mustard, and pepper together in a wide, shallow bowl.
2. Dredge  round steaks in the flour mixture to coat completely.
3. Heat oil in a skillet over medium-high heat. Fry round steaks until golden brown, 2 to 3 minutes per side; transfer to a slow cooker, reserving drippings in the skillet.
4. Saute onion and garlic in the reserved drippings in the skillet until softened, 2 to 3 minutes more; add to the slow cooker. Discard the oil.
5. Stir beef broth and tomato paste together in a bowl until the paste dissolves into the broth; add tomatoes, Worcestershire sauce, paprika, thyme, and oregano. Pour the broth mixture over the round steaks in the slow cooker.
6. Cook on Low until the meat is tender to the point of falling apart, 6 to 8 hours.
7. serve over rice

Zucchini Chocolate Chip Coconut Bread

Zucchini a bountiful crop. My son has a garden that is plentifully , he works at his regular job and in his garden, I guess he needs something to do . With his family of 3 children and his wonderful wife., he should be busy. But no, he still needs something extra to do. Brian gives me all the vegetables to cook . This means I am as busy as he is, oh well maybe he wants to keep me busy too. As a result, I have made many zucchini dishes, casseroles,fritters cornbread,stuffed,muffins,and cakes, this is just of few. With a few more recipes. I could become the queen of zucchini. Please send me ideas for this harvest it would help, I was thinking pickles what do you think!



Cooked in a loaf pan


Zucchini Chocolate Chip Coconut Bread

3 cups flour ( 1 1/2 cup all-purpose flour and 1 1/2 cup bread flour)
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon ground nutmeg


3 large eggs (beaten)
1 cup oil (canola, soy bean )
2 cup sugar ( 1 cup brown firmly packed,and white sugar 1 cup)
1 tablespoon vanilla or vanilla nut butter


2 cups zucchini grated
1 cup chocolate chips
1/4 cup coconut grated

Preheat oven 350

grease 2 9x5 inch loaf pans

1. In medium bowl add flour, salt.baking powder,baking soda, cinnamon,and ground 

nutmeg. Sift together, once.

2. in large bowl add eggs,oil,sugar,and vanilla.

3. Fold the dry ingredients into wet , just until combined.

4. Add zucchini, chips,and coconut fold into mixture.

5. Place into Pans or pound cake pan. Bake for 35 to 45 minutes. insert toothpick 

 if it comes out clean with crumbs remove from oven


drizzle with a lime confectioners sugar icing

2 lime (zest 1) juice both
1 cup confectioners sugar
couple of drops of milk 
mix well and drizzle over bread

Amish chicken noodle casserole







My mother have been making this recipe for many years, in fact it is a family favorite that always makes it way to all holiday meals! 




Amish chicken noodle casserole
Servings 4-6
8 ounces noodles, cooked
2 cups cooked chicken, cubed?
1 cup ricotta cheese
2 cups chicken broth (canned is ok)
1 cup milk
1 diced carrot
2 stalks of celery ribs diced
1/2 cup frozen sweet peas
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup margarine
1/3 cup flour
3 tablespoon diced onion
2 cloves of chopped garlic
1/3 cup grated Parmesan cheese
Directions
Melt margarine, then add onions cook until Translucent add carrots , celery and finally garlic until lightly wilted add flour and stir until smooth.
Gradually add milk and broth, then seasonings an and peas.
Combine chicken , ricotta cheese, and cooked noodles, and prepared sauce.
Place in a greased 9 x 13 inch baking pan and top with Parmesan cheese.
Bake at 350ºF for 35-45 minutes, or until heated thoroughly and top is browned slightly.

Amish Macaroni Salad

Amish Macaroni Salad, it is rich and creamy,sweet,and slightly sour. A perfect summertime side dish. It goes well with chicken, pork,or beef. Even hot-dogs and sausages,and sandwiches benefit from this pairing. 




Amish Macaroni Salad


INGREDIENTS:
2 cups uncooked elbow macaroni
3 hard-cooked eggs, chopped
1 small onion, chopped
3 stalks celery, chopped
2 grated carrots
1 small red bell pepper, seeded and
chopped
1 small green bell pepper,seeded,and chopped
2 tablespoons dill pickle relish
2 cups mayonnaise
3 tablespoons prepared yellow mustard
3/4 cup white sugar
2 1/4 teaspoons white vinegar
1/4 teaspoon salt
3/4 teaspoon celery seed
DIRECTIONS:
1. Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until 

tender. Drain, and set aside to cool.
2. In a large bowl, stir together the eggs, onion, celery, red pepper, and relish. In a small bowl, stir 

together the mayonnaise, mustard, white sugar, vinegar, salt and celery seed. Pour over the vegetables, and 
stir in macaroni until well blended. Cover and chill for at least 1 hour before serving.

Blueberry Crisp

Well here I go again blueberries, as I have said before my husband loves them. I had a few left over and decided to cook a blueberry crisp. I looked around the internet and found an unusual ingredient in the crisp, mayonnaise. I was surprised and interested in the concept of using mayonnaise in a sweet dessert.  And it really paid off, this crisp is delicious and very rich, the mayonnaise had something to do with that I am quite sure. Even my picky eater EJ loved it!

"The mayonnaise adds a little tang to this delightful fresh blueberry crisp. It's really delicious."
INGREDIENTS:
4 cups fresh blueberries
1 cup all-purpose flour
3/4 cup white sugar
1/2 teaspoon ground cinnamon
1/2 cup mayonnaise
DIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place the blueberries into an 8 inch square baking dish. In a medium bowl, stir together the flour, sugar, and cinnamon. Stir in the mayonnaise until the mixture resembles coarse crumbs. Sprinkle over the top of the berries.
3. Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned.

Chicken Vegetable and Noddle Soup

I have been making this for so many years,and my family and friends seem to like this soup. It is cheap and tasty. Hope you all enjoy it !!

Chicken vegetable and noodle Soup

Ingredients

5 chicken thighs skinless
1 stalk celery cut in chunks
1 carrot chopped chunks
2 clove whole garlic
1 teaspoon steak seasoning
 oil enough to lightly grease bottom of pan
4 cups water
Rinse chicken and pat dry with pepper towel.
Sprinkle steak seasoning on both sides. Add oil to pot and brown chicken on both sides. Then add water and rest of ingredients, and cook until done about 35 minutes. When done remove chicken and place to the side drain broth and discard cooked vegetables.

5 cups chicken stock
1 carrot diced
2 stalks celery diced
1 medium onion diced
2 large potatoes diced 
1 teaspoon salt
1 teaspoon steak seasoning
1 1/2 cup egg noodles
3/4 cup frozen green peas

1/4 cup water 
1 tablespoon corn starch ( dissolve in water)

 place the next 4 ingredients into pot ,chicken stock,  carrots, celery,and ,onions cook until carrots are 

tender.Then add potatoes cook until tender. Add salt,and steak seasoning and noodles,cook until noodles are 

done, add pea stirring well. Pour corn starch into pot mixing well cook until thicken. Serve

Best served hot!

INGREDIENTS:
3 tablespoons brown sugar
1 1/2 tablespoons paprika
1 1/2 tablespoons salt
1 1/2 tablespoons ground black pepper
1 Tablespoon Chili Power
1 teaspoon onion powder
1 teaspoon garlic powder

DIRECTIONS:
1. Mix together the brown sugar, paprika, salt, black pepper, and garlic powder. Rub into pork ribs. For best results, allow ribs to marinate overnight. Grill ribs as desire

Sunday Breakfast and they liked it!

I woke up this morning and thought my family needed breakfast. I cooked some sausage, omelets and apple slices. I had cooked the biscuits earlier this week and it save me time. I am doing summer cleaning to my home, and have not had much time to cook any elaborate meals. Like little children my family has been asking about where are the goodies. I am always amazed when they act like little ones, needing special treats. I have one son who has his own home and still he will come by everyday to see what I have cooked. He will bring his kids also and they will ask the same question what did you cook today grandmother?  Oh, he will be upset that his family missed this meal. Oh, well I feel he should learn to cook like most people, and tell him that often. This is for all the ones who refuse to learn to cook ! Get with it and start cooking in your kitchen! When you do this you get exactly what you want!

Mamma"s Biscuits

Mamma's Biscuits
When I was very young, my mother taught me to make biscuits. I would always forget the recipe . But finally I remembered It in my late teens, and boy am I glad I did. Soft and tender, fluffy  they melt in your mouth. The same taste from childhood is in my home now, just because I learned how to make my Mamma's biscuits


Biscuits

3 cups flour all purpose
2 Tablespoon white sugar
1 teaspoon salt                                                               
These are ready to be placed on baking sheet

3 Tablespoon baking powder                                             

1/2 cup shortening or butter

1 cup milk
1 tablespoon yogurt

Mix the dry ingredients together, then add the shortening cutting it into the flour mixture, cut into pea size. Then mix the liquid and yogurt well. add milk into the flour mixture trying not to over mix. form a ball , on a floured surface , flatten into 1/2 inch thickness. Use biscuit cutter. place on greased baking sheet, and bake for 20 minutes or until browned.

I used a mixture of bread flour and all-purpose flour i like the texture.

Korean Beef Bowl
Ingredients
1/3 cup sugar
1/4 cup soy sauce
1 tablespoon sesame oil
1/2 teaspoon crushed red pepper
flakes, or more to taste
1 tablespoon grated ginger
1 tablespoon vegetable oil
3 cloves garlic, minced
1/2 small onion finely diced
1 pound ground beef
2 green onions, thinly sliced
Cooked rice, for serving

Instructions
In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and
ginger.
Heat vegetable oil in a large skillet over medium high heat. Add garlic and cook, stirring
constantly, until fragrant, about 1 minute. Add finely diced onion stir until translucent. Add ground beef and cook until browned, about 35
minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in soy sauce mixture
and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
Serve immediately with rice.

This is a meat loaf I cooked for my son. He came over with the meat and I provided the rest. The onions, green peppers , seasonings , and the time. He came back over to pick-up the meat loaf and had to taste it. U mm he loved it.


Wrap Bacon from end to end

Bacon Wrapped Meat Loaf

1 Pound ground beef
1 1/4 cup bread crumbs
2 Tablespoon steak seasonings
1 teaspoon salt
1 teaspoon powdered garlic
1/2 diced onion
1 bell pepper diced
1 grated carrot
2 minced garlic cloves
1/4 cup BBQ sauce
1 egg
1 pound package bacon

Preheat oven 350
Place all ingredients in bowl, and mix well. Shape into a loaf,and wrap bacon 

around loaf from end to end. Place in baking pan (13x9) and cover with foil. 

Bake for 40 minutes, then remove foil to brown bacon for 15 minutes.  Use BBQ 


sauce as a glaze. Enjoy

Blueberry Muffins

It's Blueberry season and my husband is happy!! Happy, because he loves them ; while I am indifferent to them. cooked, or fresh it makes no difference to me, but for him they are great tasting in pies, bread, muffins, cookies the list can go on and on for him. Therefore, when the blueberries hit the stores I went shopping,for the best price and the best looking berries. I am making blueberry muffins for my family some love them,but others hate them it is just a matter of taste. I must give credit to allrecipes.com for the recipe. I did  reduce the recipe in half  and it still came out great!

Cook Time: 25 Minutes
Ready In: 40 Minutes
Servings: 12

INGREDIENTS:
1 cup fresh blueberries
2 tablespoons all-purpose flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons margarine
3/4 cup white sugar
1 eggs
1/2 teaspoon vanilla extract
1/2 cup milk
DIRECTIONS:
You have scaled this recipe's ingredients to yield a new amount (12). The directions below still refer to the original recipe yield (24).
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffins tins, or line cups with paper liners.
2. Sprinkle 1/4 cup flour over blueberries, and stir to coat berries thoroughly.
3. In a small bowl, whisk together 2 cups flour, baking powder and salt.
4. In a large bowl, cream margarine, and gradually mix in sugar. Beat eggs, and stir into creamed mixture along wi
th vanilla. Stir in milk alternately with flour mixture, mixing well after each addition. Fold in berries. Fill muffin cups 2/3 full with batter.
5. Bake for 25 minutes.

Oh goody Caramel Candy, chewy, sweet, and soft Caramel Candy. 

The grand kids love them and so will you. I wanted to make a special sweet treat for my family and found this recipe on justapinch.com, and boy was it Delicious. However my main concern was how much time would a busy person spend in the kitchen and cook time is only 6 minutes. Now that is a winning number. Nevertheless, cooling will take over 2 hours. But the cost was pretty super $3.00 or under if you use generic products. 




 EASY CARAMELS


Ingredients 
1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light Karo syrup
1/2 cup sweetened condensed milk
Directions
1. Combine all ingredients in a saucepan
2. Cook 6 minutes on med ­high heat, stirring every two minutes.
3. Stir and pour into lightly greased dish.
4. Let cool.
5. Cut, wrap in wax paper & store in an air tight container
6. Enjoy whenever you like :)

Coconut Cashew Butter Cookies
INGREDIENTS:
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup white sugar                                                                 

1 teaspoon vanilla extract
1/2 cup cashew butter
1/2 cup firmly packed brown sugar
1 egg
2 Tablespoon sour cream tablespoons milk
1/4 cup coconut
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix flour, baking soda, and salt together in a small bowl.
3. Beat butter, white sugar, and vanilla extract together with an electric mixer in a large bowl until smooth. Add cashew butter, brown sugar, egg, and milk to the butter mixture; beat until smooth. add coconut Gradually add flour mixture and mix until just incorporated into a dough.
4. Roll dough into 1 1/2-inch balls and arrange onto a baking sheet. Lightly press a fork into the top of the balls to make a crosshatch pattern.
5. Bake in preheated oven until golden brown, 12 to 14 minutes. Makes 24 cookies

Chocolate Chip Banana Bread

I can remember as a kid standing in the kitchen, and eating 5 to 6 bananas at a time.
I love bananas! I love them, I really do! I eat them plain, in muffins, cakes,and on ice cream. When you add them to any flour mixture, a moist treat is sure to follow, and this  recipe is one great treat. Bananas and chocolate what's not to love!








Easy Banana Bread

Servings: 10

INGREDIENTS:
3 ripe bananas, mashed
1 cup white sugar
1 egg  
1/4 cup melted butter
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chocolate chips
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
2. Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
3. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.




I used over ripe bananas and the flavor of bananas shines though , so use the ones you would throw away, for they are the very best in flavor! Good Baking

Creamy Beef Helper

I saw someone on YouTube use Ramen Noodles, and decided  do something similar It was simple, easy, and cheap. I put my own spin on it in hopes of making a great tasting dish. Well It worked, and here is the recipe hope you enjoy!!


                                                   

  


Creamy Beef Hamburger Helper


1 1/2 to 2 Pounds ground beef

3 to 4 packages of Ramen Noodles (save flavor packs)

1 medium chopped onion

1 green pepper

1 Tablespoon minced garlic

1 Tablespoon chopped parsley

1 Tablespoon southwest spice mix

2 1/2 cup beef broth

2 tablespoon flour


1/4 cup water

 1. Brown ground beef cooking all water out.
2.Add 3 or 4 packages of broken Ramen Noodles cook until lightly browned.
3.Add onion, green pepper, garlic, and parsley cook until onions are translucent.
4.Add spice, and 2 flavor packs stir well.
5.Pour in the broth heating well
6. Mix flour, 1 flavor pack and water until lumps
disappear
7.Mix into meat and meat mixture, cook until thicken.

Sweet Corn Bread








Sweet Corn Bread a staple of the South and old school cooks. This recipe I learned from my mother. In the  South you use cornbread to sop up gravies,and green juices, kale, collard,and salad greens. The secret to this bread is the buttermilk tangy and creamy it leads to a moist dense bread, that helps it absorbs all the good flavors.
If you cook this you will be cooking an authentic Southern favorite.   










 Sweet Corn  Bread




Ingredients

1 1/2 cup all-purpose flour


1/2 cup yellow cornmeal


1/2 cup white sugar


1 teaspoon salt


3 1/2 teaspoons baking powder


1 egg


1 cup buttermilk


1/3 cup vegetable oil

Directions

1.Preheat oven to  350 degrees F.


2. Oil 9 inch round cake pan.


3.in a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and oil until well

combined.


4.pour batter into prepared pan.


5.Bake for 25 minutes.

Fresh Green beans

A few days ago I went to Roanoke Rapids and went 
shopping at Save A Lot. They had fresh green beans at a 
good price and I had to buy some Then I looked for a 
different way to prepare them and I found this recipe. It is 
sooo good PLEASE TRY!!!

Fresh Green Beans, One Way


1 lb green beans

1 cup chopped onion

2 cloves garlic

1/2 cup chopped red bell pepper

2 tablespoons bacon grease (can substitute 1 T butter and 1 T olive oil)

1 cup chicken broth

1/2 to 1 teaspoon kosher salt (can substitute regular table salt; use 1/4 to 1/2 teaspoon)

Ground black pepper

Snap the stem ends of green beans, or cut them off in a big 
bunch with a knife if you’d like. Just don’t tell Granny. Melt 
bacon grease in a skillet over medium low heat. Add garlic 
and onions and cook for a minute. Then add green beans 
and cook for a minute until beans turn bright green. Add the
 chicken broth, chopped red pepper, salt, and black pepper. 
Turn heat to low and cover with a lid, leaving lid cracked to 
allow steam to escape. Cook for 20 to 30 minutes or until 
liquid evaporates and beans are fairly soft, yet still a bit crisp.
 You can add more chicken broth during the cooking process, 
but don’t be afraid to let it all cook away so the onions and 
peppers can caramelize.
